So with pregnancy cravings come great recipes that must be shared. I was having a hankering for chocolate cake, and I came across this one from allrecipes.com and found an amazing cream cheese frosting recipe on the same website that go great together. Enjoy!!!
- Chocolate Cake
Ingredients
- 2 cups boiling water
- 1 cup unsweetened cocoa powder
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup butter, softened
- 2 1/4 cups white sugar
- 4 eggs
- 1 1/2 teaspoons vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 9 inch round cake pans. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside.
- In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between the 3 prepared pans.
- Bake in preheated oven for 25 to 30 minutes. Allow to cool.
Cream Cheese Icing

Ingredients
- 2 (8 ounce) packages cream cheese, softened (I used one package of 1/3 less fat, and one regular)
- 1/2 cup butter, softened (unsalted)
- 2 cups sifted confectioners' sugar
- 1 teaspoon vanilla extract
Directions
- In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.
Next time I will double this recipe for the cake above, DELICIOUS!

Whole grain Waffles

Ingredients
- 2 eggs, beaten
- 1 3/4 cups skim milk
- 1/4 cup canola oil
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup whole wheat pastry flour
- 1/2 cup flax seed meal
- 1/4 cup wheat germ
- 1/4 cup all-purpose flour
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 1/4 teaspoon salt
Directions
- In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
- Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

Green Bean Casserole
Ingredients
- 2 (14.5 ounce) cans green beans, drained
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 6 oz can French fried onions
- 1 cup shredded Cheddar cheese
- 1- 2 Tbsp milk
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F
- Place green beans and soup in a large microwave-safe bowl. Add cheese and 1 cup of french fried onions. Mix well
- Bake in a preheated 350 degrees F oven until the cheese melts and the onions just begin to brown, about 30 minutes. Add remaining french fried onions and bake for 5 more minutes.
Delish Country Apple Dumplings. And oh-so-easy!
2 large Gala or Granny Smith apples, peeled and cored
2 (10 ounce) cans crescent roll dough
1 cup butter
1 cup white sugar
1/2 cup brown sugar
1 tsp cinnamon
1 tsp vanilla
12 ounces Mountain Dew
Vanilla ice cream or whipped cream, optional
small bowl of cinnamon and sugar mixture (add nutmeg and other spices that go in an apple pie if you have them)
1. Preheat oven to 350 degrees F. Grease a 9X 13 baking dish.
2. Cut each apple into 8 wedges and roll in cinnamon and sugar mixture. Separate crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the smallest end. Pinch to seal and place in the baking dish.
3. Melt butter in a small saucepan and stir in the sugar. Once mixture is thick and caramel-like, add 1 tsp cinnamon and 1 tsp of vanilla. Pour over the apple dumplings. Pour Mountain Dew over the dumplings.
4. Bake for 35 to 45 minutes in preheated oven, or until golden brown.
